Maple Syrup Stir-fried Brussels Sprouts

This recipe a Hot Thai Kitchen recipe, it’s a mix of Thai and Canadian staples, fish sauce and maple syrup.  As weird as this combination sounds, it’s the perfect balance of the umami from the fish sauce, and the maple syrup candying the Brussels sprouts.   Make it with a cast iron pan to give the Brussels sprouts a good char, it makes the sprouts the perfect texture, still a bit of the crunch, and softened just enough.

Maple Syrup Stir-fried Brussels Sprouts

Ingredients

  • Brussels Sprouts halved
  • dash sherry
  • dash fish sauce
  • dash maple syrup

Instructions

  • Heat a cast iron skillet, add a generous amount of oil
  • Place all the Brussels sprouts, cut side down (do not crowd the Brussels sprouts, it need to touch the pan to sear, do it in batches if necessary)
  • Fry until the Brussels sprouts are nice and browned, stir and add a generous dash of sherry, and stir down more
  • Turn the heat low, and add a dash of fish sauce and a dash of maple syrup to taste.
  • Serve
