薯仔炆雞翼

從細我就被湊大我既珍姐寵壞,佢煮咩都非常好食。但係佢唔准我入廚房,話我阻住晒,所以佢既手藝我一點都學唔到。不過唔怕,佢幫我打左好好既基礎,等我知道要煮成點樣先至叫好食。薯仔炆雞翼係屋企餸,食到就有家既味道。

薯仔炆雞翼

Ingredients

  • 雞翼
  • ½ 洋蔥
  • 冬菇 (乾冬菇就最好,不過其他菇類都得)

醃料

  • 茶匙
  • ½ 茶匙
  • 白胡椒粉
  • 1 湯匙 蠔油
  • 1 茶匙 粟粉
  • 1 湯匙 紹興酒
  • (足夠蓋過材料)

調味

  • 茶匙
  • 1 湯匙 蠔油
  • ½ 茶匙

Instructions

  • 用淡鹽水浸雞翼30分鐘
  • 將雞翼洗淨、瀝乾,用廚房紙抹乾
  • 將醃料拌勻,加雞翼將醃料撈勻,醃30分鐘
  • 開鑊加3T油煎香雞翼(有雞皮個面煎先),兩面都煎香後,撈起(無須煎熟)
  • 將薑同冬菇落鑊,聞到薑味落洋蔥,炒香後落薯仔
  • 薯仔煎香灒酒,酒揮發後加水蓋過材料,轉細火蓋蓋煮5分鐘
  • 加雞翼蓋蓋煮5分鐘
  • 雞翼煮到漲身,先撈起,開大火將薯仔煮捻,將汁煮濃
  • 將雞翼回鑊,拌勻熄火
