Zucchini Fritters

It’s make an awesome meal paired with soup, or a great snack by itself.

Ingredients

  • 2 medium zucchini yellow or green both work great
  • 1 oz almond flour
  • 3 oz shredded parmesan cheese
  • 2 eggs
  • salt & pepper

Instructions

  • Grate the zucchini onto a cheese cloth
  • Squeeze as much of the moisture from the zucchini as you can
  • Combine zucchini with the rest of the ingredients and mix until combined, let rest for a few minutes
  • On medium heat, add a little oil to a nonstick pan
  • Add 1/4 cup of the fritter to the pan and press until it becomes fritter shape
  • Fry each side for 2-3 minutes until golden
  • Optionally you can serve w sour cream, but it’s delicious as is
