Zucchini Fritters
It’s make an awesome meal paired with soup, or a great snack by itself.

Ingredients
2
medium zucchini
yellow or green both work great
1
oz
almond flour
3
oz
shredded parmesan cheese
2
eggs
salt & pepper
Instructions
Grate the zucchini onto a cheese cloth
Squeeze as much of the moisture from the zucchini as you can
Combine zucchini with the rest of the ingredients and mix until combined, let rest for a few minutes
On medium heat, add a little oil to a nonstick pan
Add 1/4 cup of the fritter to the pan and press until it becomes fritter shape
Fry each side for 2-3 minutes until golden
Optionally you can serve w sour cream, but it’s delicious as is
