Korean Stir Fried Zucchini

I have a great love for Korean food.  Just about everything I’ve come across has been a hit, but I’ve always been fascinated with their side dishes (ban-chan).  So much variety, and when you eat at Korean restaurants, they’re free.  Well, we’ve not been eating out, so we have to make them ourselves.
This stir-fried zucchini dish is simple, but nutritious and great hot or cold.

Korean Stir-Fried Zucchini

Simple but delicious, works with zucchini’s or grey and yellow squash as well.

Ingredients

  • 1 medium zucchini
  • 1 tbsp salt
  • 1 stalk green onion finely chopped
  • 3 cloves minced garlic
  • 1 tbsp sesame oil

Sauce

  • 1 tbsp fish sauce
  • 1 tsp sugar
  • 1 tsp gochugaru Korean chili flakes

Instructions

  • Cut and discard the ends of the zucchini, cut it lengthwise and into ¼“ slices, put into a large bowl
  • Add 1T salt to the zucchini, toss well, set aside for 10 minutes
  • Finely chop green onions and mince garlic
  • In a small bowl, mix together 1T fish sauce, 1t sugar and 1t gochugaru, set aside
  • Drain and squeeze water off zucchini
  • On medium heat, add 1T sesame oil, once fragrant, add and stir-fry zucchini
  • Once zucchini a little softened, add garlic and green onions. Fry until it’s fragrant
  • Add the sauce, stir fry for another 30seconds, or until the sauce has been absorbed by the zucchini. Serve.
