Korean Stir-Fried Zucchini
Simple but delicious, works with zucchini’s or grey and yellow squash as well.

medium zucchini
1
tbsp
salt
1
stalk
green onion
finely chopped
3
cloves
minced garlic

tbsp
sesame oil
Sauce
1
tbsp
fish sauce
1
tsp
sugar
1
tsp
gochugaru
Korean chili flakes
Instructions
Cut and discard the ends of the zucchini, cut it lengthwise and into ¼“ slices, put into a large bowl
Add 1T salt to the zucchini, toss well, set aside for 10 minutes
Finely chop green onions and mince garlic
In a small bowl, mix together 1T fish sauce, 1t sugar and 1t gochugaru, set aside
Drain and squeeze water off zucchini
On medium heat, add 1T sesame oil, once fragrant, add and stir-fry zucchini
Once zucchini a little softened, add garlic and green onions. Fry until it’s fragrant
Add the sauce, stir fry for another 30seconds, or until the sauce has been absorbed by the zucchini. Serve.
