Sweet Rice Cake

This recipe came from a good friend of mine, I had made my own still touches to it, it’s gluten-free, so it’s great to bring to a party. Should be served warm for the best texture.
Sweet Rice Cake
Ingredients
- 454 g glutinous rice flour 1 pack (green package)
- 1½ cup sugar
- 1 tsp baking powder
- 4 eggs
- 1 can evaporated milk
- 1½ cup milk
- ½ stick butter melted
- 1 tsp vanilla bean paste
Filling
- 1 cup red bean paste OR
- 1 cup chopped walnuts
- ⅓ cup brown sugar
Instructions
- Preheat the oven to 350 degrees
- In a large bowl, combine and mix fry ingredients
- In a medium bowl, combine and mix wet ingredients
- Add wet ingredients into dry ingredients, whisk until combined, until no lumps. (Using a kitchen aid with whisk attachment is much easier)
- Line a 9x13 bake pan with parchment paper
- Pour half of the batter into the pan for about 15minutes.
- Remove pan from the oven and spread the red bean paste on top.
- Pour the rest of the mixture into the pan and put it back in the oven. Bake for about 30 minutes or when it is golden brown.
- Take it out of the oven and let it cool before cutting it to serve.
