Sweet Rice Cake
This is a great gluten-free dessert recipe I got from a friend.
If you eat it the next day, microwave for 10 seconds to soften again.

glutinous rice flour
1 pack (green package)

baking powder

evaporated milk

vanilla bean paste
Filling

red bean paste OR
1
cup
chopped walnuts

brown sugar
Instructions
Preheat the oven to 350 degrees
In a large bowl, combine and mix fry ingredients
In a medium bowl, combine and mix wet ingredients
Add wet ingredients into dry ingredients, whisk until combined, until no lumps. (Using a kitchen aid with whisk attachment is much easier)
Line a 9x13 bake pan with parchment paper
Pour half of the batter into the pan for about 15minutes.
Remove pan from the oven and spread the red bean paste on top.
Pour the rest of the mixture into the pan and put it back in the oven. Bake for about 30 minutes or when it is golden brown.
Take it out of the oven and let it cool before cutting it to serve.
