Zucchini Fritters

Healthy but so delicious you’ll forget it’s healthy.
Zucchini Fritters
It’s make an awesome meal paired with soup, or a great snack by itself.
Servings: 8 Fritters
Ingredients
- 2 medium zucchini yellow or green both work great
- 1 oz almond flour
- 3 oz shredded parmesan cheese
- 2 eggs
- salt & pepper
Instructions
- Grate the zucchini onto a cheese cloth
- Squeeze as much of the moisture from the zucchini as you can
- Combine zucchini with the rest of the ingredients and mix until combined, let rest for a few minutes
- On medium heat, add a little oil to a nonstick pan
- Add 1/4 cup of the fritter to the pan and press until it becomes fritter shape
- Fry each side for 2-3 minutes until golden
- Optionally you can serve w sour cream, but it’s delicious as is
