Sweet Rice Cake

This recipe came from a good friend of mine, I had made my own still touches to it, it’s gluten-free, so it’s great to bring to a party.  Should be served warm for the best texture.

Sweet Rice Cake

This is a great gluten-free dessert recipe I got from a friend.
If you eat it the next day, microwave for 10 seconds to soften again.

Ingredients

  • 454 g glutinous rice flour 1 pack (green package)
  • cup sugar
  • 1 tsp baking powder
  • 4 eggs
  • 1 can evaporated milk
  • cup milk
  • ½ stick butter melted
  • 1 tsp vanilla bean paste

Filling

  • 1 cup red bean paste OR
  • 1 cup chopped walnuts
  • cup brown sugar

Instructions

  • Preheat the oven to 350 degrees
  • In a large bowl, combine and mix fry ingredients
  • In a medium bowl, combine and mix wet ingredients
  • Add wet ingredients into dry ingredients, whisk until combined, until no lumps. (Using a kitchen aid with whisk attachment is much easier)
  • Line a 9x13 bake pan with parchment paper
  • Pour half of the batter into the pan for about 15minutes.
  • Remove pan from the oven and spread the red bean paste on top.
  • Pour the rest of the mixture into the pan and put it back in the oven. Bake for about 30 minutes or when it is golden brown.
  • Take it out of the oven and let it cool before cutting it to serve.
